So strange how it works out around this time of year: I've grown lots of tomatoes and done delicious things with them as they ripened. And yet there I was on a late fall weekend with, strange but true, pounds and pounds and POUNDS of green tomatoes. Again.
What I'm planning to make, what I've made so far:
7 pints and about a half-pint left over that I put in the fridge.
Italian Green Tomato Preserves, made with honey, lemon, and vanilla bean
8 quarter-pints, 2 half-pints. This turned out super sweet, beyond my expectations. It's like candy.
Green Tomato Hot Dog Relish: Double batch of this recipe. 6 pints, 6 half-pints. I had a bit of leftover brine from the sweet pickles and threw that in too. I've never been a relish fan (really, it's cucumbers I'm not a fan of). This recipe is going to convert me to a relish lover. Tasted great out of the pot and I know it will get even better with time.
Dill Pickled Green Tomatoes now that I know I have some family who likes those (you know who you are) https://creativecanning.com/dill-pickled-green-tomatoes/
Green Tomato/Apple Mincemeat (Mince-No-Meat, really): Kind of a wild-hair idea. The ingredients read as very chutney-adjacent. If I make a lot of this I'm going to need this batch of recipes for "what do I do with mincemeat?" questions. I do still have apples left thanks to an unexpected gift from a kind stranger earlier this year.
Roasted Green Tomato Salsa Verde? But we still have a couple of pints left from a batch made with tomatillos back in 2023. We don't eat a lot of that.
Beyond that, maybe can some sliced to be able to have fried green tomatoes in the middle of winter? They're supposed to hold up pretty well for that use.
Why no chutney, you ask? Still working on batches from years past! I love-love-love chutney and have about 4 kinds on the shelves right now.
I've been down this road before and I'm sure I'll go down it again. My sweetie asked if maybe I'm growing too many tomatoes. Well, no, not if they all ripen and I can have a bunch of canned homegrown tomatoes on hand midwinter, but the season didn't fully cooperate. Strange how that happens...every year. 😆
